Cracker-Veggie Spreads

Serves 8

1 block (8 oz.) low-fat cream cheese
1/2 cup shredded low-fat cheddar cheese
2 tablespoons low-fat salad dressing or mayonnaise
1 teaspoon dry mustard
1/2 red pepper, seeded and chopped
1 green onion, chopped
1/4 cup fresh chopped parsley


Place all ingredients in a food processor and process until thick and creamy. If too thick, add a little fat free milk to insure a creamy spread. Place in a covered container and refrigerate until ready to serve as a cracker spread, sandwich filling, or for stuffing celery.
