Julia's Beef Roll - Ups

Serves 8

1 small package (6 ounces) beef-flavored stuffing mix
8 beef cutlets, about 5 ounces each, pounded out to 1/4-inch thick (ask the butcher to cut the meat to specifications for you)
2 tablespoons olive oil
1 medium onion, chopped finely
1 cup beef broth
1 cup red wine
2 cloves garlic, minced
1 cup sliced fresh mushrooms
1/2 cup fresh chopped parsley as garnish


Prepare stuffing mix according to package directions.

Lay the beef cutlets on a large piece of waxed paper, and spoon the prepared stuffing mix on each cutlet evenly. Carefully roll up the cutlet jellyroll fashion, and fasten each roll with a toothpick.

Heat the oil in a large skillet, and carefully place the roll-ups (the pulpette) and onion in the pan and brown on both sides, turning carefully. Lower heat. Add the wine, broth, and garlic, cover, and simmer 35 minutes.

Add the mushrooms, cover, and continue to cook another 5 minutes.

Place the pulpette on a warmed platter, sprinkle parsley on top and serve.
