Turkey and Vegetable Tortillas

Serves 6

6 flour tortillas
1 pound pkg ground turkey breast
1 pkg taco seasoning mix
2 cups tomatoes chopped and divided
1 cup zucchini chopped
1/2 cup water
1 cup multi-cheese shredded cheese reduced fat Colby Jack
1 1/2 cups lettuce shredded
3 tablespoons cilantro chopped
1/4 cup green bell peppers chopped


Place tortillas in single layer on baking sheet. Spray 1 side of tortillas with cooking spray. Sprinkle lightly with about a teaspoon of Taco seasoning. Bake for 6 minutes or until crisp at 400º. Spray a nonstick skillet with cooking spray. Add turkey, cook on medium high until no longer pink, stirring frequently. Add 1 cup of tomatoes, zucchini, water and remaining taco mix; simmer 5 minutes. Spoon turkey mix evenly onto tortillas: top with cilantro, cheese, peppers, tomatoes.
